Cinnamon Sweet Potato Protein Pancakes! Find the whole recipe below and follow along with the video to make this mouthwatering alternate this morning! Makes 8 Pancakes.
What you’ll need
- ¾ Cup Sweet Potato –Baked super soft
- 3 Whole Eggs
- ½ Cup Milk of Choice – I used Almond Milk
- ¾ Cup (60g) Cinnamon Protein Powder
- 2 tsp Vanilla
- 1 tsp Cinnamon
- 1tsp Baking Powder
- 1 tsp Baking Soda
- ¼ tsp Pink Sea Salt
- 3 Tbls Flour –I used Sweet Potato Flour
(You can sub flour just add one Tablespoon at a time as each flour absorbs liquid at a different rate, you may need more or less depending. Batter should not be runny or too thick to spread by itself in the pan.)
Directions
- Mix together sweet potato, eggs, milk, protein and vanilla.
- In a separate bowl, sift flour and remaining spices. Mix together and let sit for a few minutes.
- Heat pan on Med heat and spray with non-stick spray. When pan is hot add 1/3 cup of mixture. Cook 1-2 minutes on each side.
- Top with your favorite sauce, syrup, fruit or granola. Can be stored frozen for up to six months.
