Maximum muscle report - BackBack Sweet Potato Skin Chips | Meal Prep Monday

These are a great substitute if you’re looking for a crispy snack, but wanting to stay on the healthier side!

5 lbs Sweet Potato 

Cinnamon

Stevia or sweetener of choice


Cut Potatoes in half or more to create similar thickness for even baking.  Arrange on a lined baking sheet.  Bake in the oven at 400degrees for 45min-1hr until potatoes are very soft and skins are lifting from the flesh.  Remove from oven and peel off skins, using a spoon to remove any addition flesh that has stuck to the skins.

Use scissors to cut or your hands to tear the skins to create chip size pieces.  Arranges in a single layer on lined baking sheet and place back in the oven at 200Degrees for 1.5hours, flipping chips after 45 minutes. 

Allow chips to cool. Make sure chips are no longer flexible, you need to remove all moisture for them to stay crispy.  If they are still flexible after cooling, place back in the oven for 15-30min.  Store in an airtight container on the counter.
