Meal Prep Monday – Balsamic Chicken
- 3lbs of Chicken Breast
- 4 TBSP Balsamic Vinegar
- 1 TBSP Red Chili Sauce
- 1 TBSP Honey
- 1 TSP Ginger
Note: When in contest prep, all recipe ingredients can be substituted. Textures, consistency, and flavor may change some but it gives you much more options than plain boring bland chicken. For this recipe you could use Apple Cider Vinegar, Red Chili Powder, and an original flavor liquid or powder Stevia sweetener. These are a few examples to change up the monotony.
Directions: Preheat oven to 405F. In a large Ziploc bag, mix together balsamic dressing, red chili sauce, honey, and ginger. Place chicken in Ziploc bag and shake until coated. Marinate for at least 20 minutes, but the longer the better! I even like to marinate meats overnight to pick up more flavor. Place chicken pieces on a baking sheet, and bake for about 15 minutes.
Other Options: Besides baking, the chicken would also be fantastic grilled or even cooked in a crockpot and made into a balsamic shredded chicken.
