Healthy and fun meals to help celebrate the Fourth of July and Labor Day! The Firecracker Salmon and Red, White, and Blue Potatoes will help you stay on track with your nutrition and help you celebrate The United States of America!

Firecracker Grilled Salmon

4-6 Skin on Salmon Filets
1 Tbls Minced Garlic
1 tsp Minced Ginger
1 Tbls Olive oil or oil of choice
1 Tbls Low Sodium Soy Sauce
2 Tbls Chili Garlic Sauce
1/4 tsp Liquid Stevia OR 1tsp Brown Sugar
Salt and Pepper

In medium bowl mix together all ingredients BUT the Salmon, salt, pepper and paprika. Sprinkle salt, pepper and paprika over Salmon Filets. Dunk filets in marinade and then cover with remaining sauce. Cover dish and refrigerate for 20min-2hrs. You do not have to let the salmon sit in the marinade if you don’t have time. There is plenty of flavor in the sauce without.

You may want to grease your grill grates to ensure the salmon doesn’t stick. Grill over medium heat (400 degrees) for 6 minutes skin side up before flipping. Flip salmon only when it releases from grill without a fight. Grill for another 3 minutes, remove and let rest.

Red, White & Blue Mini Roasted Potatoes

1-2lbs Mini Potato Medley (Red, Gold & Purple)
1/3-1/2 Cup Chopped Red Onion
12 Garlic Cloves Peeled and Sliced (yes one whole garlic bulb)
2-3 Tbls Fresh Rosemary lightly chopped
1 Tbls Oil of Choice (I used Garlic Expressions)
Salt and Pepper to taste

In large bowl, quarter potatoes into bite size pieces. Add onion, garlic, rosemary, oil, salt and pepper and toss until coated. Roast in a 475 degree oven for 25 minutes.
