MEAL PREP MONDAY | TURKEY STUFFED BELL PEPPERS

The colder the weather gets, the harder it is to resist urges of reaching for comfort food. Midwest Muscle Report is offering one of our favorite recipes that tastes like comfort food for the entire family, Turkey Stuffed Bell Peppers!

 

What you’ll need…

1 lb. of ground turkey (choose the 99% lean for less fat)

6 large bell peppers

1 medium onion, chopped

1 cup rice of choice (cooked, follow recipe on box)

1  14 oz. can diced tomatoes

2 Tbsp. Worcestershire sauce

1 teaspoon salt

1 teaspoon pepper

1 cup no fat shredded cheddar cheese

 

How to make it…

Combine the ground turkey, onion, diced tomatoes, rice, worcestershire sauce, salt, pepper and cheese

Cut off each top of each pepper and scrape out the inside

Place bell peppers in slow cooker then stuff each bell pepper with mixture

Cook on low for six hours or on high for four hours until peppers are tender and turkey is cooked through

Let sit for about 15 minutes before serving, top with additional no fat cheese if desired

 

With this recipe, the excuse of being too busy to cook goes out the window. Prep time is roughly 20 minutes and once in the slow cooker, your work is done! Put in before leaving for work, on your lunch break, or right when you get home and the family will smell the deliciousness as soon as they walk through the door! Kudos goes to you 😉
