What you’ll need…
1 lemon, thinly sliced
1 Tbsp. Dijon Mustard
2 Tbsp. fresh parsley leaves
3 Tbsp. olive oil
1 Tbsp. whole grain mustard
1/4 tsp. dried rosemary
1/2 tsp. dried thyme
Kosher salt and fresh ground pepper
16 ounces baby potatoes, halved
Preheat oven to 375 degrees Fahrenheit
In a bowl, mix 2 tablespoons olive oil, both mustards, rosemary together with salt and pepper to taste
Cut four sheets of foil, a foot long and divide the potatoes into four equal portions and place inside each piece of foil
Fold up the sides of each foil, drizzle remaining tablespoon of olive oil and salt and pepper, mix together to combine
Coat both sides of each chicken breast with mustard mix and then top with lemon slices.
Fold up foil packets and place on a single baking sheet
Bake until chicken is cooked through and potatoes are tender, roughly 30 minutes.
