MEAL PREP MONDAY | CLEAN EATING SHEPHERDS PIE

As we get deeper into the gloomy, dark winter it gets more and more difficult to keep your eye on your long term goal. Whether your goal is having that rockin’ bod at the 2017 Arnold Classic or your annual family vacation is approaching in the spring, here is another Midwest Muscle Report inspired recipe that can let you enjoy some comfort food while not taking three steps backwards!

Clean Eating Shepherds Pie 

What you’ll need…

(For Mashed Sweet Potatoes)

2 Tbsp. Extra Virgin Olive Oil

4 Medium Chopped Sweet Potatoes – can be substituted out for white potatoes

Sea Salt

 

(Filling)

1 lb. Extra Lean Ground Turkey – can be substituted for lean ground beef or ground chicken

1 Medium Chopped Onion

2 Tsp. Extra Virgin Olive Oil

2 Cups Frozen Mixed Vegetables

2 Tsp. Worcestershire Sauce

1/2 Cup Chicken Stock

Ground Pepper

Sea Salt

 

Directions… 

Pre heat oven to 400 degrees Fahrenheit

Boil sweet potatoes with 1 tsp. of sea salt in large pot until very tender

In a large skillet add 2 tsp. of extra virgin olive oil over medium heat

Add onion, ground turkey (or substitute), frozen vegetables, worcestershire sauce, chicken stock, cook together till meat is cooked through.

Spoon filling evenly into large cooking dish, do not drain the juice

Set aside while finishing the mashed sweet (or white) potatoes

Drain water from pot of sweet potatoes

Mash using electric mixer or hand masher

Add in 2 Tbsp. extra virgin olive oil, salt and pepper to taste

Spread the mashed potatoes evenly over the pie filling

Bake for 30 minutes until bubbly and browned, remove from oven and serve

 

This dish is not only delicious right out of the oven but is perfect for meal prep through the whole week! Enjoy with your family or keep it all for yourself!
