Meal Prep Monday | Avocado Spinach Artichoke Dip

Snacking season is upon us! Parties, tailgating, bonfires you name it – so here’s a favorite turned healthy!

 

What you’ll need… 

1 large avocado – halved and pitted

1 Tbsp. lemon juice

1 Tbsp. extra virgin olive oil

1 clove garlic, chopped

1.5 cups baby spinach

1/2 cup marinated and drained artichokes

1/4 tsp. sea salt

Pinch of red pepper flakes

Fresh ground black pepper

 

Directions… 

1. Add avocado, olive oil, lemon juice, garlic, salt, pepper flakes, ground black pepper into food processor – Blend until smooth

2. Add spinach and artichokes pulse roughly 15 times until they are roughly chopped – pausing to scrape the sides of processor as necessary

3. Scrape into serving bowl and enjoy with pita chips, veggies or crackers
